After many years of decline Spanish Sherry Wine is once again up there being recognised as an outstanding classic Fortified Wine…. the equivalent of their close friends Port Wine and Madeira Wine. Andalucia located in beautiful Southern Spain is the meeting point of two continents…..Africa And Europe, as well as the Atlantic Ocean and Mediterranean Sea is Sherry Wine country and most of the Sherry Wine producing region lies between two of Spain's finest and historic cities Cadiz and Seville. The white chalky landscape certainly conjures up flamenco dancers, performing white horses, original tapas and the king of aperitifs Fino or dry Amontillado Sherry Wine, with or without almonds. Palomino grape vines dominate the countryside, followed by two other Sherry Wine favourite grape varieties Moscatel and Pedro Ximenez grape vines.

A few snippits that hopefully will help……try drinking Sherry Wine with a glass that is very thin and transparent. Copitas are traditional and perfect and only fill your glass halfway, this will allow you to swirl and twirl the wine around the glass releasing all the bouquet and sweet aromas before you sip. Fino and Manzanilla Dry Sherry Wine should preferably be served chilled. Oloroso and Pedro Ximenez Sherry Wine can be served at room temperature, they go well with strong cheeses, also try nearly frozen on their own or with hot fruit pies. Amontillado and Palo Cortado Sherry Wine can vary in styles, therefore its best to experiment.
